Yummy Peanut Butter Cookies..Healthy Too!
Healthy Peanut Butter Cookies
1 c. Shortening
1 c. Peanut Butter
1 c. Evaporated Cane Juice
1 c. Sucanat
2 Eggs
1/4 c. Milk
2 tsp Vanilla
3 1/2-4 c. Flour
2 tsp Baking Soda
1 tsp Salt
In a mixing bowl, cream shortening, peanut butter, cane juice and sucanat. Add eggs, one at a time, beating well after each addition. Beat in milk and vanilla. Combine flour, baking soda and salt. Gradually add to the creamed mixture. Roll into 1-inch balls. Place 2 in, apart on ungreased baking sheets. Bake at 375* for 10-12 minutes or until golden brown. Remove to wire racks. Approx. 5 dozen
I used the sprouted wheat in place of regular white flour to make them gluten free again. Turned out really well, although with sprouted wheat (or regular whole wheat), there is always a different texture.

Divine Divinity Candy Recipe :)
Divine Divinity
2 2/3 C. Evaporative Cane Juice
2/3 C. Agave
1/2 C. Water
2 Egg Whites
1 tsp. Vanilla
1 C. Nuts (Optional)
Stir Evaporated Cane Juice, agave and water over medium heat until dissolved. Cook, without stirring, to 260* on candy thermometer (or hard ball stage). In a bowl, beat egg whites until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites. Add vanilla; beat until the mixture holds its shape and becomes slightly dull. (Mixture may be too stiff for mixer.) Fold in nuts. Drop from top of buttered spoon onto waxed paper. Let sit until completely cool. Enjoy.
Wonderful substitute for white sugar
Evaporated cane juice is a healthy alternative to refined sugar. While both sweetners are made from sugar cane, evaporated cane juice does not undergo the same degree of processing that refined sugar does. Therefore, unlike refined sugar, it retains more of the nutrients found in sugar cane. I works exactly like sugar and measures the same.

Sugar Free Vanilla Pudding
3 Tbps Cornstarch
3 c. Milk
4 Egg yolks or 2 beaten eggs
1 Tbps Butter
1 1/2 tsp Vanilla
In heavy saucepan combine first three ingredients. Cook and stir over medium heat till bubbly. Cook and stir for 2 more minutes. Remove from heat. Add 1 cup of milk mixture to the beaten egg yolks slowly. Add egg mixture to milk mixture in saucepan. Bring to a gentle boil, reduce heat and cook and stire for 2 minutes more. (If using whole eggs, do not boil, cook till nearly bubbly, reduce heat and cook for 2 minutes more.) Remove from heat. Stir in Vanilla and Butter. Pour Pudding into a bowl, cover with plastic wrap making sure the plastic lays on the pudding to prevent a thick layer of film on the pudding. Enjoy!
